【摘要】 以粗多糖得率和含量為評價指標,對水提醇沉制備猴頭菌多糖(Hericium erinaceuspolysaccharides,HEP)工藝中主要醇沉條件進行了篩選,得出猴頭菌多糖醇沉的最佳工藝條件:提取液的濃縮比(粗提液體積∶子實體干重,mL∶g)為3∶1,醇沉濃度70%,加入乙醇時濃縮液溫度為40℃,醇沉時間和靜置溫度分別為8 h和4℃。不同醇沉濃度得到的多糖分子量分布及體外免疫活性測定結(jié)果表明,醇沉濃度為40%時,得到的多糖大分子部分占的比例較高,活性較好。醇沉濃度越高,多糖含有的小分子物質(zhì)越多。
