【摘要】 研究目的在于從保藏的9種毛木耳品種中篩選出高蛋白、高多糖含量的優(yōu)勢菌株,為毛木耳功能研發(fā)發(fā)掘出優(yōu)勢材料。通過菌絲發(fā)酵的方法獲得9種毛木耳的菌絲體,經(jīng)過組織處理,利用二奎林甲酸(BCA)檢測法和苯酚-硫酸法進行蛋白質(zhì)和多糖的篩選工作。研究結(jié)果表明,9個品種中蛋白質(zhì)含量較高的品種為毛木耳福建農(nóng),其蛋白質(zhì)含量占菌絲體鮮重的8.99%;水溶性多糖含量較高的為毛木耳紫木耳品種,分別占菌絲體干重的2.625%。通過研究發(fā)現(xiàn)9個品種中蛋白質(zhì)含量和多糖含量存在較大差異,可根據(jù)對功能成分開發(fā)需要,選擇優(yōu)勢菌株并對其進行高產(chǎn)發(fā)酵方面研究.
