【摘要】 采用固相微萃取(SPME)與氣相色譜-質(zhì)譜(GC-MS)聯(lián)用的方法,對(duì)塑料箱式氣調(diào)和塑料袋自發(fā)氣調(diào)貯藏后期的香菇中的香氣成分進(jìn)行了分析鑒定。從香菇中分別分離出多種揮發(fā)性物質(zhì),其中,醇類、含硫化合物、醛類等是鮮香菇貯藏后期風(fēng)味的重要組成部分。研究表明,與塑料袋自發(fā)氣調(diào)相比,塑料箱式氣調(diào)保鮮能夠有效地維持香菇中的香氣成分。
【Abstract】 Many volatile compounds were detected in Lentinus edodes by combining solid phase micro-extraction with GC-MS method.The alcohols,sulfur compounds and aldehydes contributed much to the overall aroma perception of the Lentinus edodes and were of characteristic aroma most possibly.Studies have shown that,compared with the PE storage,plastic box MA storage kept better quality and flavor,and improved commercial value.
