【摘要】 以平菇(Pleurotus ostreatus)菌株新831、黑平王和黑平5號(hào)為試材,研究其在不同生長(zhǎng)發(fā)育階段的羧甲基纖維素酶、濾紙纖維素酶、淀粉酶、蛋白酶、木聚糖酶、漆酶、過氧化物酶活性的變化規(guī)律。結(jié)果表明,在平菇栽培過程中,幾種胞外酶活性變化具有明顯的階段性。羧甲基纖維素酶、濾紙纖維素酶、木聚糖酶、淀粉酶和蛋白酶在菌絲生長(zhǎng)階段酶活性較低,在子實(shí)體成熟期都出現(xiàn)酶活高峰;漆酶和過氧化物酶在菌絲滿袋期酶活達(dá)到頂峰,隨后開始下降,一、二潮菇間期出現(xiàn)次高峰。
【Abstract】 Extracellular enzyme production [carboxymethyl cellulase(CMCase),filter paper cellulase(FPase),amylase,protease,xylanase,laccase and peroxidase] by three strains of Pleurotus ostreatus(Xin831,Hei Pingwang and Heiping-5) was determined at different stages of the cultivation cycle.CMCase,FPase,xylanase,amylase and protease levels were relatively low during the mycelium growth phase,and peak activities of these enzymes were recorded at the fruit body maturation stage.Highest laccase and peroxidase activities were recorded when the fungal mycelia had fully colonized the growth substrate.Enzyme levels then gradually decreased although a second,smaller,peak of activity was observed during the interval between the first and second flushes.
