【中文摘要】 紫陀螺菌〔Gomphuspurpuraceus (Iwade)Yokoyama〕蛋白質(zhì)含量較高 ,脂肪含量較低 ,并含有多種礦質(zhì)元素及多種維生素。紫陀螺菌的谷氨酸、蛋氨酸、維生素B1、維生素B2 、鐵、鋅、硒含量特別高 ,具有較高的營養(yǎng)價值
【英文摘要】 The main nutritive components in the fruitbodies of Gomphus purpuraceus (Iwade) Yokoyama were analyzed and compared with that in several other common edible fungi in this paper. The results showed that the fruitbodies of Gomphus purpuraceus had a higher protein content, a lower fat content and various mineral nutrients and vitamins. Among all these components, the contents of Glu, Met, vitamin B 1, vitamin B 2, Fe, Zn and Se were especially high. So Gomphus purpuraceus was suggested to be with higher nutritional value.
