【中文摘要】 介紹了真空冷凍干燥技術(shù)的原理、設(shè)備和干制品特點,以及食用菌真空冷凍干燥的加工要點,并對真空冷凍干燥技術(shù)在食用菌加工方面的應(yīng)用前景進行了展望。
【英文摘要】 The principle of vacuum cold drying technique (VCDT), the required equipments for VCDT, the characteristics of dried products as well as the main points of VCDT of edible mushrooms were described in detail in this paper. And the prospect of VCDT application in edible mushroom processing was also reviewed.
