【中文摘要】 遠(yuǎn)紅外定溫干燥蘑菇的脫水過程分恒速和降速兩階段,物料溫度分升溫、穩(wěn)定和再升溫三階段;干燥過程中恒速和降速兩階段的速率模型可分別為dM/dt=K_1(T-Tw)和dM/dt=K_2(M-M_e)表示。本文同時(shí)分析了平均脫水率與干后品質(zhì)間的關(guān)系。
【英文摘要】 The dehydrating process of Agaricus bisporus drying at set temperature by far - infrared radiation can be divided into 2 stages of constant speed and reducing speed, while the mushroom temperature can be divided into 3 stages of rising temperature, stabilizing temperature and re- rising temperature. It was showed in our study that the speed models during dehydrating process could be expressed with the equations of dM/dt=K1(T-Tw) and dM/dt=K2 (M-Me). And the relationship between the average dehydrating rate and dried mushroom quality was also analyzed in this paper.
