【中文摘要】 本文描述了木屑培養(yǎng)基袋栽美味側(cè)耳(Pleurotus sapidus)子實體的形態(tài)。在光學顯微鏡下可見擔孢子無色透明,表面光滑,呈長方橢圓形;在掃描電鏡下,擔孢子大小為4.08~5.21×9.21~10.44μm。分析結(jié)果表明:美味側(cè)耳水分、粗蛋白、粗脂肪、可溶性總糖、粗纖維及灰分含量分別為4.34%、38.09%、1.65%,17.4%、13.4%和7.44%;鈣、鎂、磷含量為784μg/g、1176μg/g和5043μg/g;多糖含量為5.6%~6.34%;全氨基酸含量為24.03%,其中谷氨酸含量高達4.249g/100g(干菇),必需氨基酸比例較高(45.3%)。
【英文摘要】 The morphology of fruitbodies of Pleurotus sapidus cultivated in bags with sawdust medium was described in this paper, while the morphology of basidiospore was observed with optical microscope and scanning electron microscope. The results showed that the spores were colorless and transparent with smooth surface, their shapes were rectangular-elliptical and their sizes were 4.08-5.13×9.21-10.44μm, and that the average contents of moisture, crude protein, crude fat, soluble total carbohydrate, crude fiber and ash of P. sapidus dry fruitbodies were 4.34%, 38.09%, 1.65%, 17.4%, 13.4% and 7.44% respectively; while the contents of Ca, Mg, P were 784μg/g, 1176μg/g and 5043μg/g respectively, the content of polysaccharide was 5.4 %- 6.24%, the total amimo acid content was 24.03g/100g, the glutamic acid (Glu) content and the ratio of essential amino acid were high up to 4.246g/100g (dry matter) and 45.3% resp..
