【中文摘要】 為了對(duì)利用葛根渣栽培的平菇和香菇的營養(yǎng)價(jià)值和重金屬含量做出評(píng)價(jià),采用國家檢測標(biāo)準(zhǔn)規(guī)定的分析方法,分別測定葛根渣栽培的、市售的平菇和香菇的總糖、粗蛋白、粗脂肪、粗纖維、灰分、鉛、砷、汞、鎘的含量。結(jié)果顯示利用葛根渣栽培的平菇、香菇的基本營養(yǎng)成分含量與市售的同種菌含量相近,但部分重金屬含量超出國家標(biāo)準(zhǔn)限量。說明利用葛根渣栽培的平菇、香菇與市售的同種菌相比,具有同樣的營養(yǎng)價(jià)值,但受到了部分重金屬污染。
【英文摘要】 To evaluate nutritional value and heavy metal content of Pleurorus ostreatus and Lentinus edodes cultivated with Pueraia radix root residue, the content of total sugar, crude protein, crude fat, crude fiber, ash, Pb, As, Hg and Cd in the two edible fungi marketed and cultivated with Pueraia radix root residue were determined respectively with the national standard methods. The results showed that the nutrients content of the two edible fungi cultivated with Pueraia radix root residue were almost the same with the market samples, which were polluted by some heavy metals.
