【中文摘要】 以褐蘑菇為原料,對鹽漬加工技術進行了研究。通過護色、殺青、鹽漬等工藝制得的鹽漬褐蘑菇,口感鮮美且符合食品質(zhì)量與安全標準。
【英文摘要】 In this paper the salting process of portobello mushroom as raw material was studied.The salting portobello mushroom were obtained by salting process of color protection,green removing and salting.The products were accord with food standard and taste delicious.
