【中文摘要】 以雞腿菇為材料,菌落總數(shù)為研究對象,采用中心組合設(shè)計響應(yīng)面分析法研究了超高壓處理對雞腿菇菌落總數(shù)數(shù)量級的影響。建立了以溫度、壓力和保壓時間為參數(shù)的超高壓影響雞腿菇菌落總數(shù)死亡數(shù)量級的二次多項式數(shù)學(xué)模型,理論分析了模型的預(yù)測能力較強,驗證試驗相關(guān)性分析證實了模型的準(zhǔn)確性和可靠性。最優(yōu)影響參數(shù)組合為:溫度25.0℃、壓力268.1 MPa、保壓時間14.3min。
【英文摘要】 Effects of ultra high pressure processing on total colonies of Coprinus comatus were studied by central composite design with response surface methodology in this paper.The second order quadratic equation associating temperature,pressure and pressure holding time with sterilization magnitude of total colonies was established,the good prediction ability of the model was confirmed with theoretical analysis,and the accuracy and reliability of the model were verified by correlation analysis of the validation data.The optimum process parameters for the sterilization were obtained as: temperature 25.0℃,pressure 268.1 MPa,and pressure holding time 14.3min.
