【中文摘要】 測定了以核桃殼為基質(zhì)(受專利保護)栽培平菇的主要營養(yǎng)成分和礦質(zhì)元素,通過與木屑為基質(zhì)栽培平菇的營養(yǎng)成分和礦質(zhì)元素比較,結(jié)果發(fā)現(xiàn):核桃殼種植的平菇粗纖維和多糖的含量明顯高于木屑栽培的平菇,粗纖維和多糖分別相差13.8%和3.64%;蛋白質(zhì)含量略低,相差4.5%;核桃殼組平菇礦質(zhì)元素含量較高,尤其是鐵和鋅的含量,核桃殼組平菇鐵和鋅分別高于木屑組平菇32.3mg.kg-1和36.3mg.kg-1。
【英文摘要】 The nutritional components and mineral elements of Pleurotus ostreatus culturated by Walnut shell(patent application) and by sawdust were determined.Comparing these data,the results indicated that the protein of Pleurotus ostreatus culturated by Walnut shell was relatively lower than by sawdust,the difference between them was 4.5%,and crude fiber,polysaccharide were higher than by sawdust,the difference between them was 13.8% and 3.64% separately.The results also showed that the mineral elements of Pleurotus ostreatus culturated by walnut shell were higher than by sawdust,espicially the contents of iron and zinc,the contents of iron and zinc culturated by walnut shell were 32.3 mg·kg-1and 36.3 mg·kg-1 separately than that by sawdust.
